Interesting! The question is how you would be able access it in order to quit etc. Rely purely on the Substage window? And if you close the Substage window, rely on keyboard shortcut to show it again?

Yep relying on substage bar attached to finder to do everything. Same for quiting-via substage window.
And yeah keyboard shortcuts for everything.

To clarrify hide icon from menubar option, as pressing hotkey brings up substage and the neccesary panels anyway
